As we head into the spring and summer season Blackberry Cobbler is a staple on the summer desserts menu and one of our all-time favorites. This recipe features a flour-based batter that is cooked until golden brown, unlike a gluten-free crisp that uses oats this one is going to use a topping similar to a biscuit topping.
What ingredients do you need for a Gluten-Free Blackberry Cobbler?
The following ingredients will be needed for your blackberry cobbler recipe.
- Fresh Blackberries
- Granulated Sugar
- Unsalted Butter
- Gluten-Free All-Purpose Flour
- Baking Powder
- Vanilla Extract
- Milk
- Vanilla Ice Cream or Whipped Topping for Serving
These are the items needed to make this tasty treat, likely to be found in the pantry and paired with fresh blackberries.
Don’t forget! This same recipe can be done with a variety of fruits such as blueberries, raspberries, peach, and strawberries.
What gluten-free flour should you use for cobbler?
What makes this recipe SO EASY is that the only gluten-free specific product needed is gluten-free all-purpose flour, no other gluten-free products are needed since this will be a gluten-free flour blend. As always, remember to check all ingredients before using to be sure there is no cross-contamination.
The gluten-free all-purpose flour that you choose needs to be a 1:1 ratio, meaning it can easily be swapped for regular flour. We prefer to use King Arthur Gluten-Free All-Purpose Flour or Better Batter; however, Cup 4 Cup and Bob’s Red Mill work well too.
Tips for Making Gluten-Free Blackberry Cobbler:
The most important part of this recipe is fully soaking the blackberries while also being sure not to have too much liquid in the cobbler.
The best way to do this is to wash and dry the blackberries, then place them in a colander. Place the colander of blackberries over a large bowl to catch the juice. Pour 1/2 cup of granulated sugar on top of the blackberries and let them soak for about an hour.
Once you are ready to start baking your cobbler, preheat the oven to 350 degrees F, then go ahead and use a ceramic 9-inch pie pan or a 9×13 ceramic baking dish that is microwave-safe. Place the entire stick of butter in the pan and heat in the microwave. If you are unable to heat the dish in the microwave, simply melt the butter and evenly pour it into the pan.
Now, once the butter is in the pan top it with the blackberries, do not stir the blackberries they should go right on top of the butter. Take about 1-2 tablespoons of juice from the bowl and add that to the baking dish with the blackberries.
In a medium-sized bowl, all the remaining ingredients will be mixed and then the mixture will be poured right on top of the blackberries, again remember that you do not mix anything.
The cobbler will bake in the oven at 350 degrees F for 40-45 minutes or until the top is golden brown and the blackberries are soft.
After it’s baked, let it cool and then serve with your favorite topping like Vanilla Ice Cream. The full instructions will be in the recipe card below.

Ingredients
- 4 Cups Fresh Blackberries
- 1 Cup Granulated Sugar divided into 1/2 cup each
- 1/2 Cup Unsalted Butter
- 1 Cup Gluten-Free All-Purpose Flour or Regular Flour
- 2 tsp Baking Powder
- 1 Cup Milk
- 1 tsp Vanilla Extract
- Cool Whip or Vanilla Ice Cream
Instructions
Wash and dry the blackberries well, then place them in a colander. Place the colander over a bowl and then coat the blackberries with 1/2 cup of sugar.
Let this sit for 1 hour so the juices start to flow out of the blackberries.
While the blackberries are soaking, preheat the oven to 350°F.
Using a microwave-safe baking dish, such as a 9-inch ceramic pie pan, place the stick of butter in the middle of the pan and melt it in the microwave. It should cover the entire pan.
Carefully pour the blackberries from the colander directly on top of the butter, do not mix. Add about 1-2 Tbsp of juice from the bowl of blackberry juice and evenly top the blackberries with it.
Combine the remaining 1/2 cup granulated sugar, flour, baking powder, vanilla extract, and milk in a medium-sized bowl. Mix this well to form the batter.
Pour the batter evenly over the blackberries, again remember DO NOT mix.
Bake in the oven for 40-45 minutes or until lightly browned.
Carefully remove and let cool for 5-10 minutes.
Serve with whipped topping or vanilla ice cream.
Notes
The steps for soaking the blackberries is done this way to prevent too much juice being in the cobbler. If too much juice is added to the cobbler the batter will turn purple.
