Crockpot Adobo Beef

In my Adobo Chicken recipe I mentioned that you could use pork or beef but wasn't sure off cooking times. So I experimented and made a beef version in the crockpot! There were no leftovers...

- olive oil or peanut oil
- 3/4 cup vinegar
- 1/2 cup lite soy sauce
- 1 head garlic, minced
- 3 bay leaves
- handful of peppercorns

Ingredients
- 2.5 lbs beef, ie stew meat shopping list
- olive oil or peanut oil shopping list
- 3/4 cup vinegar shopping list
- 1/2 cup lite soy sauce shopping list
- 1 head garlic, minced shopping list
- 3 bay leaves shopping list
- handful of peppercorns shopping list
How to make it
- Heat 1-2 Tbsp oil In a skillet or wok on High heat, quickly sear meat so nicely and darkly (is that a word) browned. Transfer to crockpot.
- Pour soy and vinegar in hot skillet/wok, with garlic and peppercorns, and quickly deglaze pan. Pour over meat in crockpot. Add the bay leaf.
- Cook on low 8 hour or on high 4 hours.
- Serve on bed of rice or noodles.
- Note: I did a combo, because I didn't get started until 1 in the afternoon: 2 hrs on high, 3 on low. Meat came out so savory and tender.

The garlic mellows the longer it cooks. But there is a very savory and flavorful tang to the dish.
